Original Joe’s Ground Beef & Spinach Scramble

Ingredients

  • 1 tbsp olive oil
  • ⅓ cup diced onion
  • ½ cup sliced mushrooms
  • 8 oz lean ground chuck
  • Salt and pepper to taste
  • ½ to ¾ cup chopped, cooked spinach, squeezed very dry
  • 3 large eggs
  • 1 tsp chopped fresh basil
  • 1 tsp chopped fresh oregano
  • Parmigiano-Reggiano to finish the top

Steps

  1. Beat and blend the eggs. Add the chopped herbs to the eggs and beat more.
  2. Med-high heat skillet w/ a little olive oil. Add onions and a pinch of salt; saute for 3–4 min till they turn translucent.
  3. Add sliced mushrooms and a pinch of salt. A touch more olive oil if needed. Cook until softened and browned.
  4. Add ground beef and stir and break up with the spatula. Cook 3 or 4 minutes until the beef is no longer pink (or brown if desired). Taste and add seasoning if needed.
  5. Turn off heat, push meat to top of skillet and tilt skillet so fat runs to bottom. Plop in a paper towel to remove most of the fat.
  6. Add spinach at medium heat and stir for about a minute.
  7. Dump in the eggs and stir constantly. Eggs will cook fast — until just slightly cooked.
  8. Plate it and dust with parmesan. Great with bread and a slice of tomato.
