Pasta with Pancetta and Peas
Ingredients
- Spicy Italian sausage or pancetta
- Pasta
- Bacon grease or avocado oil
- Garlic cloves (crushed and thickly chopped)
- Peas
- White wine
- Butter
- Parmesan
Steps
- Boil salted water.
- Heat up bacon grease (or avocado oil), olive oil, and a nob of butter.
- Add garlic and lightly heat until fragrant.
- Add spicy Italian sausage (or pancetta), salt, pepper, and red pepper flakes.
- Once sausage is mostly cooked, add white wine.
- When noodles are nearly ready, add them and some pasta water to the pan.
- Add another nob of butter.
- Add frozen peas.
- Remove from heat and add parmesan and mix.
- Plate, add a bit more parmesan, black pepper, and olive oil.
- Season to taste.
