Squash Casserole

One of my mom’s additions.

Ingredients

  • 12 yellow squash
  • 2 small yellow onions
  • 3 slices of dried bread
  • 2 small eggs
  • Butter, salt & pepper to taste
  • 2–4 cups of cheddar
  • 2 cans fried onion rings

Steps

  1. Fill up a steaming pot with squash. Steam it with onion for about 15 minutes w/ occasional stir.
  2. Toss it in the boiling water for another 5 minutes.
  3. Let cool & drain liquid — add butter, salt and pepper to taste.
  4. Add two small beaten eggs and 1.5 cups of breadcrumbs (sometimes I add some fried onion rings too).
  5. In a 9x9 or 9x13 baking dish, add a layer of squash and then a layer of cheese. Repeat, ending with the cheese.
  6. Bake at 350°F for ~30 minutes until center is hot.
  7. Cover with canned fried onion rings and brown for 6–10 more minutes.
